“Mother’s Day Brunch!”

Happy Mother’s Day to all the lovely mothers worldwide! Mother’s are so beautiful, strong, resilient, selfless and blessed individuals… Mother’s are the backbones and heartbeats of families! I am so grateful and thankful for my beautiful mom! I pray that you all are enjoying your special day! I’m not a mom just yet but I can’t wait until I become a mom! I have so many great role models that I look up to! Being a mom is a full-time job! Let’s celebrate moms worldwide today!

Today my siblings and I created a beautiful surprise “Mother’s Day Brunch” for our lovely mom! It’s awesome having a big family and even bigger kitchen! We all had a wonderful morning bonding over food, laughs and fun! I pray you all have a Blessed day! Enjoy XOXO! 🙂

“Quarantine & Chill Meals”

Hey guys! So most of us have all been in quarantine where we are forced to cook more! I actually enjoy cooking and I only really go out to dinner on weekends only! Since the pandemic started I have cooked more, and just took this time to really appreciate life more! I have caught up on so many activities that I normally don’t have time for when I’m at work! I have been off work for a little over a month now and I really can’t complain! I’m Alive, Healthy and Stress-Free! It took some time for me to get here though! Anyways I have a few recipes I’ll be sharing with you guys on what I’ve cooked so far! Enjoy! Recipes are from Pinterest!

Chocolate Chip Banana Bread!

D.I.Y. Starbucks Medicine Ball Tea

I’m an avid tea drinker! I prefer tea over coffee.. I enjoy drinking warm tea in the mornings on my way to work or during the afternoons before bed.. I found myself going to Starbucks every week about 2-3 times spending about $10 weekly on tea so I knew I had to break this bad habit… I found out where to get the tea from and I also watched the barista make my tea.. Who knew it was that easy and simple with a few ingredients I could make my favorite tea at home and save money while doing it.. I also drink this tea whenever I travel as well and I enjoy it so much! You can also add a few pumps of peppermint in it as well and it really helps with sinus issues or if you have a cold… It really does open you up and clear out congestion… I recreated it at home and it turned out so good! Goodbye Starbucks! Lol! I have included all the ingredients below and you can purchase everything at your local grocery store or even on Amazon!

Ingredients: Teavana Jade Citrus Mint Green Tea, Teavana Peach Tranquility Herbal Tea, Lemonade (Any kind you prefer) Honey (Any brand) You can also add peppermint tea or the candy in it as well… I used a cup or warm lemonade and placed my tea bags in my cup and I added a few drops of honey and it turned out perfect! Enjoy! Let me know if you try it!

“Breakfast on the go”

“Egg and Spinach Muffins”
We all know breakfast is the most important meal of the day, but with such busy schedules we sometimes miss breakfast…
I have a very simple, delicious and quick recipe for the girl/guy on the go! It’s also healthy and can be made several different ways!
Check it out below:
Ingredients: 6-8 large eggs, spinach, turkey or ham from the deli section at your local grocery store, season to taste with salt and pepper…

Preparation:
1. I like to take all my ingredients and separate them into smaller bowls (cheese, spinach, eggs and ham) you can chop up everything that needs to be chopped before placing them into smaller bowls
2. Whisk together your eggs and add salt and pepper…
3. Combine all ingredients into a large bowl..
4. Spray your muffin pan with olive oil and align with baking cups.. Fill each baking cup up (using a spoon) making sure it doesn’t spill over..
5. Top each baking cup with additional cheese…
6. Bake for 20 minutes (350-400 degrees temp setting for the oven)……
7. Let them cool completely before taking them out of the baking cups….
8. Refrigerate any remaining in ziplock bags and warm them up the next day.. They remain fresh for up to a week.. Great meal prep recipe to try!

4th Of July Recipes

With the 4th of July being right around the corner (This Thursday) I wanted to share a delicious dessert I made last year! I found this recipe on Pinterest and I thought you guys might want to try it! It’s very light and it’s not too sweet… I also have a few other dessert ideas from Pinterest for you all to try as well!

•Triple Berry Angel Food Cake Roll•
Ingredients
  • 1 Angel Food Cake mix plus ingredients to prepare
  • 1/4 cup + 3/4 cup powdered sugar divided
  • 8 oz light cream cheese room temperature
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla
  • 1 1/2 cups fresh strawberries diced
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh raspberries
Instructions
  • Preheat oven to 350 degrees F and line the bottom of a 10x15x1″ rimmed baking sheet with parchment paper (make sure that it lays flat on the bottom). Do not grease the pan.
  • Prepare cake mix according to package directions. Pour into prepared pan and bake for about 20 minutes, until the top is golden and the edges start to crack. *NOTE: It will rise up in the pan significantly, even over the top. But even though it gets high it should not flow over — if you’re concerned, slip an extra baking sheet or a piece of foil underneath just in case.
  • Loosen cake from the edges of the pan while it’s still warm — it’s going to be a little sticky, like angel food cake is, but it will come away easily.
  • Spread out a clean kitchen towel and sprinkle evenly with ¼ cup powdered sugar. Flip warm cake out onto the towel, peel off the parchment paper and immediately roll up starting at the short end, WITH the towel inside. Let cool completely (at room temperature for 1-2 hours or pop it in the fridge or freeze momentarily if you’re impatient like me! You don’t want it hot inside when you add your filling.)
  • In a large bowl, beat the cream cheese with an electric mixer until smooth. Add ¾ cup powdered sugar, vanilla and cream and beat on low until combined, then on high for 3-4 minutes until fluffy and stiff peaks form.
  • Unroll cooled cake (you can just leave it laying on the towel) and spread with half of the filling and top with half of the berries. Carefully roll back up (this time without the towel!) and place on a serving plate. Spread top and sides with remaining filling and top with remaining berries. Serve immediately (leftovers are best eaten within 24 hours).

“Chocolate Chip Banana Bread”

I decided to make my all time favorite banana bread recipe from tasty.com P.S. it has chocolate in it! I mean who doesn’t love chocolate?
This recipe is seriously so good and simple that you’ll want to make it every week… It’s perfect for those early mornings with coffee and it’s definitely a crowd pleaser….
Let’s get into it:
Ingredients:
  • 3 Ripe Bananas (make sure they’re really ripe)
  • 1/3 Cup, Melted butter
  • 1/2 Cup Sugar
  • 1 Egg, beaten
  • 1 Teaspoon Vanilla extract
  • 1 Teaspoon Baking soda
  • Salt, to taste (optional)
  • 1 1/2 Cups, All-purpose flour
  • 1/2 Cup Mini chocolate chips
Preparation:
  1. Preheat oven to 350˚F (180˚F).
  2. In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined…..
  3. Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth…..
  4. Add in the chocolate chips and pour the batter into a greased loaf pan. Top with additional chocolate chips. Make sure the pan is throughly greased….
  5. Bake for 50 minutes to an hour, or until a toothpick comes out clean….. (I always bake for an hour)
  6. Cool completely before serving and cutting… Typically takes about 20 minutes to cool and it’s easier to cut…
  7. Enjoy! Serve with coffee!
